I can’t believe fall is slowly sneaking up on us. Time just needs to slow its roll because I’m just really getting into summer vibes! Time is an evil mistress. I can’t really complain though, because fall is possibly my favorite time of the year.
Not only is there Halloween, but there’s the light sweatshirts, leaves galore, and so many gorgeous, warm colors. Of course, there’s also the absolutely-to-die-for recipes like Pumpkin Chocolate Chip Cookies, Pumpkin Cinnamon Rolls, Pumpkin Snickerdoodle Cupcakes, etc. Truly the best time of the year for everything. I just had to add one more awesome recipe to that list with this pumpkin bread recipe!
How Do You Make Pumpkin Bread from Scratch?
- Prep - Preheat oven and spray pan with nonstick spray.
- Make the filling - Combine all the filling ingredients and mix well.
- Make the bread batter - Cream together the pumpkin, butters, and sugar. Add the egg and vanilla. Mix again. Add the flour and milk, whisk.
- Assemble - Pour half the batter into the prepared pan. Top with the cream cheese mixture and top that with the rest of the batter.
- Bake - Bake for 40-50 minutes.
- Rest - Let the bread cool for 10 minutes before dusting with powdered sugar. Enjoy!
Tips and Variations
- Make muffins - You can make this pumpkin bread into muffins instead. Simply follow the same concept by putting half the batter in, a dollop of the cream cheese mixture, and top with more batter. You’ll want to bake them for less time. Around 20 minutes is a good place to start.
- Don’t overmix the batter - Only mix the flour and milk until just combined. Too much mixing can cause it to be too dense or even cause big air pockets to form while baking.
- Add some more ingredients - You can toss in some nuts, chocolate chips, etc. to mix things up.
- Topping alternatives - Instead of using powdered sugar, you could top the unbaked bread batter with a layer of granulated sugar for a sweet, crispy top. You can skip the sugar toppings altogether and drizzle the bread with hot fudge, caramel sauce, or icing/frosting. Just plain is a great option too!
Common Questions About Pumpkin Cream Cheese Bread
Why is My Pumpkin Bread So Dense?
Too much moisture can cause a bread recipe to not rise properly. This often can result in a denser bread. It can be tempting to add too much of a good thing in wanting to make the softest bread. However, too much of a good thing can result in a bad thing. While a dense bread is still delicious, you won’t get that fluffy outcome you may have hoped for when adding too much moisture.
What Goes Good in Pumpkin Bread?
Honestly, this would totally be up to you and the tastes you prefer. However, I have found that there are a great many ingredients that pair well with pumpkin bread. For this pumpkin bread recipe, I added cream cheese and it’s so decadent and perfect. However, other add-in ideas are below!
- Nuts (almonds, pecans, walnuts, pepitas, etc.)
- Chocolate Chips (white chocolate, caramel bits, dark chocolate, etc.)
- Nutella
- Peanut Butter
- Sprinkles
- Zucchini
