How To Prepare Rhubarb For Baking
If you haven't cooked with rhubarb before, it may seem a little intimidating. But don't fret, because preparing rhubarb for baking is actually quite simple. Here's what to do:
- First, cut the bottom and top of each rhubarb stalk with a sharp kitchen knife and remove all of the leaves.
- Then rinse off the stalks with cold, running water. There is no need to remove the skin, but if you notice any brown spots just remove with a vegetable peeler.
- Next, cut the stalks horizontally into small pieces that are about a half inch in width. Now your rhubarb is ready to be added to your recipe!
Can You Freeze Rhubarb?
Yes, you can freeze fresh rhubarb for up to 6 months. Simply prepare the rhubarb as described above. Then place a single layer of the rhubarb pieces on a baking sheet and put in the freezer. When the rhubarb is frozen, transfer the pieces to a resealable freezer-safe bag and squeeze out any excess air. Store the bag in the freezer until you are ready to use. You will need to thaw the rhubarb at room temperature before incorporating in your baked goods recipes.
