    This Mint Grapefruit Cocktail recipe is perfect for serving up at you next dinner party!     Summer is still hanging around here and one of the (many) things I love most about the season is dining outdoors. Because we live in Southern California, we are fortunate to be able to grill outdoors a good portion of the year. But when summer rolls around and the sun is setting later, you’ll find us dining al fresco almost every day of the week. There is nothing better than enjoying dinner and a drink on the back deck. Plus my fresh mint grapefruit vodka cocktail is the ideal late summer/early fall sipper!

    MINT GRAPEFRUIT COCKTAIL INGREDIENTS

    This sunset-hued grapefruit vodka cocktail is like summertime, served up in a glass. It strikes the perfect balance of sweet and tart, and is made with just five ingredients:

    • Prairie Organic Vodka
    • fresh-squeezed grapefruit juice
    • simple syrup
    • lime juice
    • fresh mint leaves

    Mint Grapefruit Vodka Cocktail
    Servings: 1

    Ingredients
    • ½ cup freshly squeezed grapefruit juice plus a couple of wedges for garnish
    • ½ tablespoon lime juice
    • ½ tablespoon simple syrup
    • 1-2 ounces Prairie Organic Vodka
    • 3-4 mint leaves
    • Ice
    Instructions
    1. In a cocktail shaker, combine a hand full of ice, grapefruit juice, lime juice, simple syrup, vodka, and 2 torn mint leaves; shake until combined.

    2. Strain into a glass, with or without ice, and garnish with a grapefruit wedge and mint leaf.
    3. Serve immediately and enjoy!
