This Applesauce Oatmeal Bread is moist full of flavor. Made with store-bought or homemade applesauce, and a few other pantry staple ingredients, this bread will be a hit with the whole family.
If any of you have a family like mine, then you will understand my kid's feast or famine lifestyle. I buy a bag of apples, they are gone within a few minutes. I buy them again, they sit until they are wilted. I buy those fancy applesauce packets, vanished out of thin air. I make a batch of homemade oatmeal, and it just sits.
However, when I turn the applesauce into a gloriously flavorful cinnamony applesauce oatmeal bread, it is once again a favorite.
When you are feeding a family of five, the process of cooking is never-ending. That is why my recipes are usually for a batch of two. Why make one loaf when you can make two and freeze the 2nd for later (if you can hide it in time)? To freeze, simply wait for the loaf to cool to room temperature, wrap in foil then plastic wrap or place it in an airtight bag, and freeze for up to 3 months. Defrost on the counter for 1 hour before enjoying.

How do you make Applesauce Oatmeal Bread?
Unlike cakes, breads are really easy to bring together and usually do not require a mixer or beater.
- Whisk together your oil and sugar in a large bowl.
- Add applesauce, eggs, and vanilla. Whisk until combined.
- Stir in flour, oats, baking powder, baking soda, salt, and cinnamon.
- Pour batter into greased loaf pans and sprinkle with extra oats.
- Bake for 40-45 minutes or until a knife is inserted and comes out clean.
- Let cool for 15 minutes before slicing.
What's the best applesauce for baking?
Pretty much any applesauce will work in baking. However, if you are using sweetened applesauce, you may want to reduce the sugar in the recipe by ¼ cup. If using flavored applesauce, make sure that specific flavors will work with the cinnamon, or simply omit it.
What does applesauce do in baking?
Applesauce is a great oil alternative. It can replace oil in a recipe with a 1:1 ratio – for example, if an ingredient list calls for a ½ cup of oil, replace it with a ½ cup of applesauce. However, it may change the consistency of the baked goods. I personally would not use it in place of butter, as the fat in butter comes from milk solids. It can also replace the use of eggs in a recipe, but again, it may change the of the final product. Applesauce is great for adding moisture to a recipe because of its water content but may absorb differently to the flours. Whether you are looking for a lower-calorie treat, or simply replacing it because you are out of the other ingredients, it's a great substitution item.

What kind of oatmeal do you use in baking?
The best kind of oats to use for baking is regular old-fashioned rolled oats. These maintain their shape and texture during the cooking process the best. You can also use Quick oats as they are simply rolled oats chopped into small pieces, but maintain the same flavor. The oat texture in the baked good, however, will be finer and less obvious. I do not recommend using instant oatmeal packages or steel-cut oats for baking unless suggested in the recipe.

- 1 ½ cup granulated sugar
- 1 cup vegetable oil or coconut oil
- 2 ½ cups applesauce unsweetened preferably
- 4 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour plus more for the tops
- 1 cup rolled oats
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 ½ teaspoon baking soda
- 1 teaspoon baking powder

Preheat oven to 350 degrees. Line or grease 2 standard-sized loaf pans.

In a large bowl, whisk together sugar and oil.

Add applesauce, eggs, and vanilla; whisk until smooth.

Stir in flour, oats, salt, cinnamon, baking powder, and baking soda.

Divide batter into the two loaf pans and sprinkle with rolled oats.

Bake loaves for 40-45 minutes or until a knife is inserted in the center and comes out clean.

Cool for at least 15 minutes before slicing.

If using sweetened applesauce, reduce the sugar to 1 cup.
To freeze loaf, wrap in foil then place in an airtight bag or container. Freeze for up to 3 months. Defrost for 1 hour before enjoying.
