Why We Love These Creepy Eyeball Jello Shots (Cups)

    • They can be made in the blink of an eye (get it!?)
    • Perfect for transporting to all the Halloween Parties
    • Gives the perfect amount of creepy factor just like these Eyeball Hot Chocolate Bombs.
    • Perfect for kids, but can also be adjusted into an easy Halloween jello shot for that adult Halloween party!

    Ingredients

    • Canned Longan Fruit: These lychee-like fruits are perfect for creating the eyeball effect. The center of the longan fruit looks just like the iris of an eye!
    • Blueberries: These will be the pupils of your spooky eyeballs.
    • Jello: Choose your favorite flavor to make the "eyeball" cups. We recommend using clear or red for a truly gruesome effect. I love the look of the red jello and green jello.

    Recipe Instructions

    1. Prepare the Longan Fruit Eyeballs:
      • Drain the canned longan fruit and carefully remove the seeds from each one.
      • Place a blueberry in the center of each longan fruit. The blueberry will act as the pupil, and the longan will be the eyeball.
    2. Prepare the Jello:
      • Follow the instructions on the Jello package to make the Jello mixture. Use boiling water to dissolve the Jello powder and then let it cool slightly.
    3. Assemble the Eyeball Jello Cups:
      • Carefully place each Longan eyeball into the bottom of a Jello cup.
      • Pour the gelatin mixture into a large measuring cup and pour over the eyeballs, making sure they are fully submerged.
    4. Chill and Set:
      • Refrigerate the Jello cups for a few hours, or until the Jello is fully set.
    5. Serve and Enjoy:
      • Once the Jello is set, you can serve your spooky Eyeball Jello Cups to your eagerly waiting guests.

    Substitutions and Additions

    • Substitute Longan Fruit: If you can't find canned longan fruit, you can use a can of lychees fruit as a replacement. They have a similar texture and appearance. You can also use gummy eyeballs as a replacement.
    • Gummy Worms: For an extra creepy touch, you can add gummy worms into the Jello mixture before it sets. It'll look like the eyeballs are peering out from a murky swamp!
    • Whipped Cream:  Add a dollop of whipped cream to the top of each cup for a delicious contrast to the sweetness of the Jello. Add a candy eyeball for extra fun.
Spoon taking a scoop out of the jello exposing the fruit eyeball.

Making Halloween Eyeball Jello Shots for the Grown-Ups

If you're hosting an adults-only Halloween bash and want to elevate the spook factor, you can transform these Eyeball Jello Cups into Eyeball Jello Shots. Just follow the same steps as the kid-friendly version, but with a twist - adding a splash of your favorite vodka to the mix. Here's how:

    1. Prepare the Longan Fruit Creepy Eyeballs: Follow the instructions as mentioned in the previous recipe, creating the longan and blueberry eyeballs. You can even experiment with different flavored liqueurs to add an extra layer of intrigue to your eyeballs.
    2. Prepare the Jello-Alcohol Mixture: Instead of using hot water to dissolve the Jello powder, replace it with your choice of alcohol. Berry Vodka, rum, or even flavored liqueurs like schnapps or blue curaçao work wonderfully. Adjust the amount of alcohol to suit your taste and the level of spookiness you desire.
    3. Assemble the Eyeball Jello Shots: Carefully place each Longan eyeball into the bottom of the plastic shot glasses or small condiment cups. Pour the Jello-alcohol mixture over the eyeballs, ensuring they are fully submerged.
    4. Chill and Set: Refrigerate your Eyeball Jell-o Shots for a few hours, or until the Jello has fully set and the alcohol has infused the eyeballs.
    5. Serve and Enjoy: Your adult guests will love these eerie and boozy spooky Halloween Jello Shots!

Remember to enjoy these responsibly and ensure your guests are of legal drinking age. These spooky treats will undoubtedly add a memorable twist to your adult Halloween festivities. Cheers to a wickedly fun night! Check out these other frighteningly delicious boozy treats- Poison Apple Cocktail, Black Raven Rum Cocktail, or Halloween Vodka Cocktail.

    Reader Questions and Answers

Can I use fresh fruit instead of canned longan?

While canned longan is ideal for this recipe because of its distinct eyeball-like appearance, you can use fresh lychee fruit as a substitute. They're quite similar in texture and taste.

Can I make these Eyeball Jello Cups in advance?

Absolutely! You can prepare them a day or two ahead of your Halloween party. Just keep them covered in the refrigerator until you're ready to serve.

Can I use vegetarian or vegan Jello?

Yes, you can! There are vegetarian and vegan Jello options available that use plant-based gelatin alternatives. Check your local grocery store for these alternatives if you have dietary restrictions.
