These bars start off with a chewy oatmeal cookie crust. Then a layer of rich and creamy cheesecake filling is added, followed by sweet and tart apples and a crumbly streusel topping. And to top it all off, a drizzle of homemade caramel sauce. There is really only one word to describe them, and that word is WOW!

- My favorite baking apples are Fuji Apples or Honeycrisp Apples. Both varieties hold up really well during baking and have the perfect amount of sweet/tart ratio.
- Other good baking apples Jonagold or Granny Smith apples although these are a bit more tart.

- 1 cup firmly packed brown sugar
- 1 cup all-purpose flour
- ½ cup old fashioned rolled oats
- ⅛ teaspoon salt
- ½ cup unsalted butter softened
- 3 Honeycrisp or Granny Smith apples peeled, cored and finely sliced
- ½ teaspoon ground cinnamon
- 1 ½ cups all-purpose flour

Preheat oven to 350 degrees F. Line a 9x13 inch pan with foil or parchment paper.

To make the streusel topping, combine brown sugar, flour, oats, and salt. Work in the butter, mixing until coarse crumbs form. Cover and refrigerate until ready to use.

To make the apples, toss together the chopped apples with 2 tablespoons of sugar and cinnamon. Set aside.
