Strawberry Mint Jam is the perfect way to enjoy the flavor of summer all year long!
Here in Southern California, strawberry season is in full swing. And we sure are enjoying the beautiful bounty. I have been incorporating fresh, juicy, straight-from-the-garden strawberries into all my favorite dishes and baked goods (like these scrumptious Strawberry Cheesecake Bars). But we still end up with more ripe strawberries than we can use up, which is fine with me. Because a surplus of fresh berries means it's time for me to make my favorite Strawberry Mint Jam.
Contrary to what many people think, making jam is actually quite simple. In fact, the most labor-intensive part of the process is washing and preparing the strawberries and canning jars. Luckily, my supply of new Brawny® Tear-A-Square® paper towels makes this prep work much easier.

Tips for Making Strawberry Mint Jam
- Use this test to determine if the jam has set up. Place a small plate in the freezer to chill. Then, drizzle a little jam onto the plate and run your finger through it. If you leave a line in the jam, it should be set.
- When in doubt, remember that it’s better to under cook than overcook your jam.
- Make sure to add the mint is after the jam is ready, otherwise it will become bitter.

- 4 cups fresh diced strawberries
- 3 1 ⁄2 cups sugar
- 1 tablespoon lemon juice
- ½ pouch Certo Liquid Fruit Pectin
- 10 mint leaves finely sliced
- 4-5 half pint canning jars with lids

Sterilize jars according to manufacture's directions.

Wash and drain the strawberries. Remove their green caps and dice.

Combine diced strawberries, sugar, and lemon juice in a large, heavy-bottomed saucepan, set over medium heat.

Bring mixture to a boil, then continue to cook for 1 minute.

Remove from heat and stir in pectin and mint.

Carefully ladle jam into jars leaving a ¼ inch headspace. Wipe rims of jars with a damp paper towel and fit with lids. Process in a boiling water canner.

If not preserving with a water bath, bring jars to room temperature and refrigerate for up to 1 month
