    Triple Chocolate Espresso Cookies

    Today's giveaway is my favorite kitchen item-after my mixer of course. In fact, during the San Diego fires in 2008 my machine was one of the few things I grabbed before we were asked to evacuate!! Luckily nothing burned down where we were located! Can you imagine me having to explain to my kids that their childhood pictures burned, but my coffee maker didn't. That would be a major sarcastic Mom of the Year moment.

    I have been drinking Nespresso coffee since I first lived in Switzerland 12 years ago. Keurigs are cool if you are looking for a single serve standard coffee, but if you are looking for a classy and impressive cup, Nespresso is your coffee! It is the silkiest, most delicious cup ever. E.V.E.R. No I am not getting paid to say this 🙂

    Triple Chocolate Espresso Cookies

    So today I am giving away a Nespresso Essenza Machine. You will have to order the coffee (or pick it up at Bloomingdales).     Triple Chocolate Espresso Cookies

    I used a shot of Nespresso for these cookies which gave them an intense coffee and chocolate flavor. They were perfect for an afternoon snack with a cup of Nespresso!

    Triple Chocolate Espresso Cookies and Giveaway #2

    Ingredients
    • 1 ¼ cups butter (2 ½ sticks)
    • 2 cups sugar
    • 2 large eggs
    • 1 teaspoons vanilla extract
    • ¼ cup strongly brewed espresso
    • 2 ¼ cups all-purpose flour
    • ¾ cup cocoa
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup white chocolate chips
    • 1 cup milk chocolate chips
    Instructions
    1. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper or non stick spray.
    2. In the bowl of your mixer, cream butter and sugar.
    3. Add vanilla and espresso and mix to combine.
    4. Add eggs, one at a time, mixing in between each addition.
    5. In a separate bowl combine flour, cocoa, baking soda and salt.
    6. Gradually mix in flour with wet (butter and eggs) mixture.
    7. Add white and milk chips and stir to combine.
    8. Scoop out 1 inch scoops and place them 2 inches apart on the baking sheet.
    9. Bake for 8-9 minutes.
    10. Makes 4 dozen cookies

      It's not really a baking tradition but my dad makes gin fizzes every Christmas morning. He takes a pitcher over to our neighbors who have also been enjoying this festive drink for 25 years! I can't imagine not having it on Christmas morning.

      Each year I try to make jam thumbprint cookies and snowball cookies from scratch. We typically buy sugar cookie dough from the store for the kids to decorate too.

      Haha - every time I see a Nespresso machine I think of you!!!! I can't wait to try it one day soon!! My favorite Holiday baking tradition is chocolate peppermint cookies....always reminds me of Christmas!

      I love to bake all throughout the year. At Christmas I have a stollen recipe that is lovely. I also have a plum cardamon bundt cake that everyone raves about. There are so many recipes to discover that I have a difficult time preparing a repeat as I always love to try
      something NEW!!!!

      I would love to win this! Thanks for offering! I just started drinking coffee less than a year ago (and I'm 39). My husbands goal was to get me to drink the cheapest drink at Starbucks! haha I went from years of drinking hot chocolate, to low fat mocha, to latte, to coffee. Now I love checking out coffee houses all over the place. Basically he turned me into a coffee addict! haha

      I work at a preschool and each year, I decorate a big gingerbread cookie with my three year olds. While it is "cooking" in the oven we read the classic Gingerbread Boy story that my parents read to me when I was little. During story time, somehow (with the assistance of a parent helper!) the gingerbread cookie escapes from the oven and hides in the preschool. The children and I run around trying to find it and when we eventually do, we gobble it up before it can run away again. Love, love the magical thinking of preschoolers!

      During the Holidays I am usually in such a hurry I try to make one pie( pumpkin) and also a home made spice cake which is our family's tradition since well before I was ever born. Thank you
