Today is National Walnut Day! Did you know that more than 99% of walnuts grown in the United States come from Central California? Californian agriculture is one of the many reasons why California is such great state to live in! Last year when the California Water Coalition asked me to participate in Walnut Day I made this delicious buttermilk walnut bread with browned butter glaze and walnut kale pesto- both of which have become family favorites. Walnuts offer a wide variety of nutritional benefits including antioxidants protein, fiber, magnesium and phosphorous.
This year when I asked for walnut recipe recommendations, everyone had nostalgic cravings. I get it. When I think of a walnut, I think of a warm chocolate chip cookie with melting chips and loaded with walnuts or a rich fudgy brownie with a delicious walnut in every bite. And once you start thinking about those things there is no looking back until you are chewing on your first glorious bite.
A generous slice of this pie will bring back all of those childhood memories. Smothered with cool whip and generously topped with extra chocolate and chopped walnuts then drizzled with chocolate syrup...bliss. Seriously is there nothing better. Not today my friends, not today.
- 8 ounces semisweet chocolate chips
- 8 tablespoons unsalted butter (1 stick)
- 1 cup sugar
- 2 large eggs
- ¾ cup flour
- ¼ cup unsweetened cocoa powder
- ¼ teaspoon salt
- 2 tablespoons milk or cream
- 1 cup chopped walnuts
- 2 cups softened cool whip
- ¼ cup chocolate chips
- ¼ cup chopped walnuts
- chocolate syrup for drizzle

Preheat your oven to 350 degrees

With nonstick cooking spray, grease a 9in pie dish.

Melt butter and chocolate chips in the microwave on high for 1 minutes.

Remove and stir together.

If the choc/butter mixture is not completely melted, put back in microwave for 30 sec.

Let cool for about 5 minutes.

Add eggs and sugar to chocolate and whisk together. A

dd the flour, salt and milk, and whisk together to mix.

Pour into baking dish.

Bake for 30 min.

Cool completely.

Once cool, spread brownie with softened cool whip and sprinkle with chocolate chips and walnuts.

Place in freezer for at least 30 minutes.

Remove and cut right before serving.

Drizzle with chocolate sauce.
