We're keeping the posts simple for the next two weeks because we are in somewhat of a remodel here in The Seaside Baker household. I was crazy enough to have started everything while my husband and two older kids are galavanting in Europe (while I am sweating my bootay off). Once they come home and are surprised, I will post pictures. It is going to be AWE-Some!!!!!
S'mores are such a fun summertime treat, but now they can be savored all year long! These delicious stuffed chocolate cookies or these S'mores Brownies will be a hit no matter what time of year it is! The chocolate cookie dough base is made using my favorite recipe from Cook's Illustrated. I also used this recipe for my Dulce de Leche Chocolate Chip Bars. The recipe is foolproof and the browned butter adds such a great nutty flavor, which pairs perfectly with the graham crackers.
These cookies are huge, so don't put more then 6 on a sheet! Enjoy!
- 1 ¾ c unbleached all purpose flour
- ½ t baking soda
- 14 T unsalted butter
- ½ c granulated sugar
- ¾ c packed dark brown sugar
- 1 t table salt
- 3 t vanilla extract
- 1 large egg
- 1 large egg yolk
- 1 ¼ c semi-sweet chocolate chips
- 6 large marshmallows cut in fourths
- 2 bars of Hershey's Chocolate , broken up in rectangles
- 2 graham crackers , cut into 1 inch squares

Preheat oven to 350 degrees.

In a heavy bottomed sauce pan, melt butter until browned. It takes about 5 minutes for butter to begin to smell nutty and start to brown, but watch carefully because it goes from perfectly browned to burned very fast.

Once browned, remove from heat and allow to cool for 5 minutes.

Add browned butter and sugars to the bowl of a mixer and mix until combined.

Add eggs and yolks one at a time.

Add the vanilla.

In a separate bowl, combine your dry ingredients.

Gradually add flour to the wet mixture and mix on low until just combined.

Turn mixer off and mix in chocolate chips.

Refrigerate dough for at least 1 hour.

Once dough has chilled, scoop out a 1 in ball of dough.

Flatten ball slightly and top with graham cracker, marshmallow, and some extra chocolate.

Top with another 1 in dough ball.

Pinch together the sides of the top and bottom dough balls and place on a lined cookie sheet.

Bake for 15-17 minutes.
