When the cold months roll around, I begin to crave the wonderful winter-y fruits. This Cranberry Orange Roulade is all of my favorite flavors rolled into one beautiful cake. It is easy to make and provides a festively delicious dessert.
'Tis the season for cooking- all day, everyday. From prepping for the big holiday meals, to making edible gifts for family and friends, there always seems to be a whirlwind of flour flying around. At times like these, I enlist in my favorite brands to help me produce something spectacular without taking the day to prepare.
Even before partnering with Krusteaz, I have always loved their products. From their pancake mixes to their Meyer Lemon Bar mix, and everything in between, I can always count on it turning out perfectly. My current favorite mix is the Cranberry Orange Muffin Mix. I can have delicious warm muffins on the table in less than 30 minutes. What's not to love about that?
Last week I was invited to a last minute dinner party at my friend's house. Like usual, I offered to bring a dessert, forgetting that I didn't have much time to prepare one. I pulled out a box of this muffin mix and stared at it for a good 5 minutes trying to think of ways to turn it into a beautiful dessert. That's when this Cranberry Orange Roulade hit me. It wouldn't take long to prepare and is extremely easy to decorate. Only a few minutes of prep time, baking time, and cooling time, the whole dessert took minimal hands on time.
Once cooled, I unrolled the cake, slathered it with cream cheese frosting, and tightly rolled it back up. For the finishing touches I added a bit more frosting to the top and garnished it with fresh cranberries and orange slices. Not only was it beautiful on a dessert plate, but it was so full of flavor. Thankfully this was one of those desserts that were an experimental success!

- 2 Packages Krusteaz Cranberry Orange Supreme Muffin Mix
- 1 cup water
- ½ cup milk
- ⅔ cup oil
- 4 eggs
- 1 cup cream cheese room temperature
- 2 tablespoons butter room temperature
- 1 teaspoon vanilla extract
- ¾ cup powdered sugar
- 1 teaspoon fresh orange zest
- Fresh Cranberries
- Fresh Orange Slices
- Powdered Sugar

Preheat oven to 350 degrees. Grease a 13 by 18 by 1-inch sheet pan with non-stick cooking spray then line the bottom of the pan with parchment paper.

In a large bowl, stir together muffin mix, water, milk, oil, and eggs until blended.

I saw in the DIRECTIONS about adding cans of undrained cranberries, but didn't notice that on the INGREDIENT list on the blog so wasn't sure how many/size of those? thank you
