How Do I Make Brown Butter?
It's really quite simple to make brown butter. All you're really doing is cooking butter long enough to turn the milk solids brown while getting rid of the water content. It does require a watchful eye, as the butter can easily if not careful. Following these steps will help you achieve brown butter perfection:
- First, cut unsalted butter into small, evenly-sized pieces so it will melt and cook evenly. Then place the butter a light-colored pot or pan; this is important as you will need to be able to see how dark the butter gets as it cooks.
- Next turn on the heat to medium and let the butter melt. Stir or swirl the butter constantly, until in starts to become a light tan color. You will want to remove the pan from the heat and keep stirring, since the butter will continue to cook.
- When the butter is a nut brown color, pour it into a bowl to stop the cooking process.

- 4 long and skinny potatoes skin peeled and thinly sliced
- 1 ⁄4 cup of butter melted
- 15 leaves of sage thinly chopped
- 1 teaspoon of onion powder
- salt and pepper to taste
- 2 tablespoons of Gruyere cheese grated
- 1 tablespoon of Parmesan cheese
- Fresh parsley to garnish optional

Preheat oven to 425 degrees Fahrenheit. Grease 12 muffin cavities.

In a medium bowl add melted butter, seasonings, and cheese together and mix.

In a large bowl, add in sliced potatoes and toss in butter mixture and mix to coat potatoes.

To the muffin cavities add an even layer of potatoes throughout each cavity.

Bake potato stacks for 45 minutes on the middle rack.

Remove from oven, garnish with parsley and additional grated cheese if desired. Let sit for 3-4 minutes before removing potato stacks. Serve.
