Now, lets talk about this Homemade Skillet Granola. Most people don't realize how easy granola is to make. Compared to the store-bought granola, the homemade version costs a fraction to make.
I usually use the oven when making my granola, but was eager to try out this version. The oil and heat from the skillet really brings out the flavors of the nuts and spreads their oils all over the oats. It is fantastic and the perfect recipe to take on long hikes, enjoy in a filling yogurt parfait (as done in the photos), or to just have on hand to snack on. Make an extra batch or two and gift it to friends with their own copy of the book!

- 1 tablespoon extra virgin olive oil
- 2 cups old-fashioned rolled oats
- ¼ cup chopped pistachios
- ¼ cup almond slices
- ¼ cup chopped walnuts
- ¼ cup raisins
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon

Prepare the fire for medium-high heat. Place the grill plate over the flames.

Heat a 10-inch cast-iron skillet over hot flame and then add olive oil.

Add the oats and nuts and cook until toasted, 2 to 3 minutes, stirring as they cook. You will smell the nuts as the heat releases their oils.

Stir in remaining ingredients and cook for 1 more minute.

Remove from the heat and allow the granola to cool in the skillet.

Serve alone or with yogurt.
You can also use coconut, sesame seeds, pumpkin seeds, and pecans. For dried fruit alternatives, chop dried apricots or use dried cranberries, cherries, or blueberries.
