    Lofthouse Style Cookies

    I have to say that I am extremely proud of myself for posting a holiday recipe before the actual holiday!!! Not only that, I have 3 maybe 4 more posts almost ready for the 4th. I also have almost every email responded to and my laundry almost done! I am on a roll!!!!!

    Now onto the cookies. These are perhaps one of the few cookies that I will buy, and only because as of today I had never made them before. Store bought no more!! These cookies are cake like, light and not overly sweet...just like the originals! They are easy to make, but the dough is sticky so they require a bit of refrigerator time.
    Soft Baked Lofthouse Style Cookies
    I have been using plain Greek yogurt in quite a few recipes lately and have been loving the results. However, if you do not have any on hand for this recipe, cream cheese or sour cream will work as well.
    Make these for any holiday by switching out the colored frosting and adding different sprinkles!

    Ingredients
    Lofthouse Style Sugar Cookies
    • ½ cup plain Greek yogurt
    • ½ cup butter , softened
    • 1 cup sugar
    • 2 eggs
    • ½ teaspoon vanilla
    • 3 cups flour
    • 1 ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 heaping teaspoon corn starch
    • ½ teaspoon salt
    Vanilla Buttercream
    • 1 stick unsalted butter , softened
    • 1 ½ – 2 cups powdered sugar , sifted
    • 1 pinch of salt
    • 1 teaspoon vanilla
    • 1 teaspoon almond extract (optional)
    • 2 tablespoons milk or heavy cream
    Instructions
    Lofthouse Style Sugar Cookies
    1. Using your beaters or a mixer, beat together yogurt, butter and sugar until combined and light in color.
    2. Stop your mixer and scrape down the sides of the bowl. Add eggs, one at a time. Add vanilla. Scrape down your bowl again.
    3. In a separate bowl, combine flour baking powder and soda, cornstarch and salt. Mix to combine. Slowly add flour mixture to wet ingredients. Mix until completely combined.
    4. Cover and refrigerate dough for at least 30 minutes.
    5. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or spray with nonstick cooking spray.
    6. Scoop out 1 inch balls and place them 2 inches apart on the cookie sheet.
    7. Bake for 10 minutes.
    8. Allow to completely cool before frosting.
    Vanilla Buttercream
    1. Beat butter and extract for 2 minutes.
    2. Add powdered sugar and milk or cream.
    3. Beat with whisk attachment for 3 minutes on high.
    4. Color your frosting with your desired colors and frost cookies generously. Add Sprinkles!

      Yum! These sound like my type of sugar cookie, and I always have a big tub of greek yogurt in the fridge, so perfect!

      I can't wait to try these out. We are having a big family party for the 4th this year and I know these will be a big hit. One question though. Can they sit at room temp with the milk or cream in the frosting? We live in Arizona and its hard to keep anything cool these days. Thanks!

        I think they should be fine if they are not in direct sunlight. Also, don't stack them...they might stick together. Your best bet would be to put them out right before serving if possible. Have a happy 4th!!!
