  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper or a silpat.

  2. In a large mixing bowl, whisk flour, baking soda and powder, apple pie spice, and salt; set aside.

  3. In a large mixing bowl, combine your butter, sugars and blend well.

  4. Mix in your eggs and vanilla on low.
  5. With mixer running on low, gradually add flour mixture. Beat until just combined.

  6. Stir in diced dried apples and caramel bits.

  7. Use a tablespoon to scoop your dough into your pan and bake for 10-12 minutes.
  8. Sprinkle with flaked sea salt, if desired.

  9. Let cool and enjoy!
