Hatch Chile Marinated Feta

  • 1 pound block of Feta Cheese (I purchased my block at Whole Foods)
  • 3 Roasted Hatch Chiles (if not pre roasted, roast at 425 degrees for 30 minutes and remove skin and seeds)
  • 1 large tomato
  • ½ washed and chopped herbs such as basil , thyme, oregano, etc
  • ¼ teaspoon pepper
  • 2 cups extra virgin olive oil
  • 2 garlic cloves chopped
  • 1 large mason jar
  1. Cube your feta into 1 inch pieces, sprinkle with pepper
  2. Seed your hatch chiles and slice into thin rounds
  3. Dice tomatoes into small chunks
  4. Chop herbs and garlic
  5. Layer your jar with the feta, chiles, tomatoes, garlic, and herbs to the top of the jar
  6. Once finished, pour the olive oil into the jar until all ingredients are covered
  7. Refrigerate for at least one hour before serving
  8. Can be used for up to 2 months.
