Ingredients
  • 3 ripe bananas mashed
  • 2 ⅔ cup pancake mix
  • cup granulated sugar
  • ¼ cup buttermilk
  • 3 tablespoons vegetable oil
  • 3 large eggs
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350º F. Grease the bottom and sides of a 9×5 inch loaf pan or line with parchment paper.
  2. In a large mixing bowl mash bananas.
  3. Add eggs, buttermilk, vanilla and oil to the mashed bananas and whisk until combined.
  4. Stir in pancake mix and sugar. Mix well. Batter will be thick.
  5. Pour into the prepared loaf pan and bake for 50-55 minutes.
  6. Cool in pan for 5 minutes then transfer to a wire rack to cool completely.
