Start with the dry ingredients. In a medium mixing bowl, combine the oats, flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl or the bowl of a stand mixer, add butter, brown sugar, and granulated sugar. Beat on medium speed until thoroughly combined (about 1-2 minutes).
Add the eggs and vanilla extract. Then beat on high until combined, about another minute.
Now add the dry ingredients to the wet ingredients and mix on low speed until it forms a dough. Be careful not to overmix.
Cover and chill the dough for at least 45 minutes in the refrigerator. Do not skip this step as it avoids your cookies spreading.
