Almond Milk Thai Iced Coffee

Almond Condensed Milk
  • 2 ¾ cups Blue Diamond Almond Breeze
  • ½ cup coconut sugar (or regular sugar)
  • 2 whole cardamom pods
  • 1 pinch of salt
  • ½ teaspoon vanilla extract
  • Iced Coffee
  • 1 cup strongly brewed coffee (cold)
  • Ice
Almond Condensed Milk
  1. In a heavy bottomed pan, combine Blue Diamond Almond Milk, sugar, cardamom pods and salt.
  2. Heat on medium low heat stirring occasionally. Do not boil mixture, keep in on a slight simmer.
  3. Cook until liquid has reduced to 1 cup, which may take a few hours.
  4. Remove cardamom pods and add vanilla extract.
  5. Once mixture has reduced, remove from heat and place in a heat proof container.
  6. Refrigerate overnight to allow to thicken more.
  7. To make the iced coffee add ice to a glass and pour coffee over. Top with a generous table spoon of almond milk condensed milk and stir to combine.
  8. Enjoy immediately.
