Fig Bacon Spinach Salad With A Champagne Vinegarette

Ingredients
  • Dressing:
  • 1 garlic clove , finely chopped
  • ½ a small shallot , finely chopped
  • 2 tablespoons dijon Mustard
  • ¼ cup champagne vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup extra virgin olive oil
Salad
  • 3 cups fresh spinach
  • 3 fresh figs , sliced into quarter wedges
  • ½ cup crumbled goat cheese
  • ½ cup bacon crumbles.
Instructions
  1. To make the dressing whisk together all of the dressing ingredients until the ingredients are homogenized.
  2. Toss the spinach with the dressing and top with sliced fig, crumbled goat cheese and bacon crumbles.
  3. Serve immediately.
