30 Minute Yellow Chicken Curry

Ingredients
  • 1 pound chicken breasts , diced into 1-2 inch pieces
  • 2 tablespoons oil
  • 1 onion , chopped
  • 3 cloves of garlic , finely diced
  • 1 tablespoon Spicy Indian Curry
  • 1 ½ tablespoons regular Curry
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 cup frozen edamame
  • 1 cup frozen mixed vegetables
  • 1 and ½ can coconut milk
  • Chopped cilantro for garnish
  • Basmati Rice- cooked according to directions on package
Instructions
  1. Heat oil in a pan on high heat.
  2. Add chicken and cook for 4 minutes.
  3. Add spices and stir to combine.
  4. Add edamame and vegetable and stir to combine; cook for about 5 minutes.
  5. Add coconut milk and simmer for 15 minutes.
  6. Ladle over rice and garnish with chopped cilantro.
