White Chocolate Cherry Cookie Ice Cream Sandwiches

Ingredients
  • 1.5 cup unsalted butter room temperature
  • 1.5 cup brown sugar firmly packed
  • ½ cup granulated sugar
  • 2 large eggs at room temperature
  • 4 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cup white chocolate chips
  • 1.5 cup dried cherries
  • Blue Bunny® Cherrific Cheesecake Ice Cream
Instructions
  1. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.
  2. In a bowl combine flour, baking soda, and salt. Set aside.
  3. Cream butter and sugars with your mixer until light and fluffy.
  4. Add vanilla.
  5. While mixer is running on low add eggs, one at a time, mixing and scraping down the bowl in between each addition.
  6. Gradually add flour to wet mixture and mix until just combined.
  7. Stir in white chocolate and dried cherries.
  8. Cover dough and refrigerate for 1 hour.
  9. Once cold, scoop out large 2 inch balls and roll.
  10. Place on cookie sheet about 2 inches apart.
  11. Bake at 350 degrees for 10-12 minutes.

  12. Cool completely before making sandwiches.
  13. To make sandwiches, scoop a large scoop of ice cream onto cookie and sandwich with another cookie.
  14. Store leftover ice cream cookie sandwiches in a sealed bag for up to 3 weeks.
