Buttery Coffee Cake

Ingredients
  • 8 tablespoons melted Plugra butter
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 and ½ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk , room temperature
  • 3 teaspoons pure vanilla extract
Topping
  • 2 cups all-purpose flour
  • 1 ½ cup light-brown sugar , firmly packed
  • 2 teaspoons ground cinnamon
  • 1 cup unsalted melted Plugra Butter
Instructions
  1. Preheat oven to 325 degrees. Spray a 9x13 inch baking dish with nonstick cooking spray.
  2. In in a bowl combine flour, sugar, baking powder, and salt.
  3. In the bowl of your mixer, beat 8 tablespoons melted butter, eggs, buttermilk and vanilla extract until combined.
  4. Stir in flour mixture.
  5. Pour batter into baking dish.
  6. To make the topping, combine the flour, 1 cup melted butter, brown sugar, and cinnamon. Mix until small clumps form.
  7. Sprinkle topping over the batter.
  8. Bake for 45-50 minutes or until a knife is inserted and comes out clean.
