  • 1 ½ cups fresh cherries pitted
  • 2 tablespoons fresh lemon juice
  • 2 ½ cups all-purpose flour plus 2 tablespoons for dusting cherries
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup canola oil
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon almond extract
  • ½ cup plain yogurt
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
  • Topping
  • ¼ cup sliced almonds
  1. In a small bowl, stir together the cherries, lemon juice, and 2 tablespoons of flour.
  2. In a separate medium bowl, whisk together the 2 ½ cups of flour, baking powder, and salt. Set aside.
  3. Whisk together the canola oil and sugar in a large bowl.
  4. Add the eggs, one at a time, whisking until completely mixed. Add the almond extract, and whisk until just combined.
  5. Pour in about half of the dry ingredients, mixing well, then add the remaining dry ingredients along with the yogurt. Fold everything together with a wooden spoon or spatula until just mixed. A few small lumps are fine. The batter will be thick, almost like bread dough.
  6. Fold in the cherries until evenly distributed in the batter. Spread the batter into the prepared loaf pan with a spatula and cover loosely with a piece of foil.
  7. Bake for 1 hour, remove the foil, and bake for another 20 minutes, or until the top is golden brown and a thin knife inserted into the middle of the cake comes out clean. Rest on a cooling rack for 30 minutes.
  1. Combine the powdered sugar, milk, and vanilla extract in a small bowl, and stir together with a spatula until smooth.
  2. Drizzle the glaze over the top of the cake and top off with sliced almonds.
  3. Serve at room temperature or warmed.
