Ingredients
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon cayenne pepper
  • ½ tablespoon cumin
  • ½ tablespoon chili powder
  • ½ tablespoon garlic powder
  • 1 tablespoon olive oil
  • ¾ pound chicken breast cut into 1-inch pieces
  • 1 medium-sized onion diced
  • 1 tablespoon diced garlic
  • 1 jalapeno seeded and finely diced
  • 1 large can 22.6 oz cream of chicken
  • 1 cup chicken broth
  • ½ cup half & half
  • 2 cans BUSH’S® Mild Pinto Chili Beans
  • 2 8.5 oz cans corn kernels, drained
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • ½ cup fresh cilantro chopped
Toppings
  • Shredded Cheese
  • Sour Cream
  • Avocado
  • Cilantro
  • Lime Wedges
  • Tortilla Chips
Instructions
  1. In a small bowl, combine spices; set aside.
  2. In a large pot set over medium heat, add olive oil, chicken, onions, garlic, and jalapeno. Saute until onions are translucent.
  3. Add cream of chicken, chicken broth, half & half, and spices. Stir until combined. Reduce heat to medium low and cook for 10-15 minutes.
  4. Stir in BUSH’S® Mild Pinto Chili Beans and corn and continue cooking for 10 minutes.

  5. In a small bowl, whisk together corn starch and water. Stir into chili and cook for an addition 5 minutes.
  6. Right before serving stir in chopped cilantro.
  7. Pour into bowls and top with desired toppings.
