Mozzarella Pizza Rolls

These individual rolls are the perfect afternoon treat and are stuffed with a delicious Mozzarella bite!

Ingredients
Dough
  • 2- 21/3 cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • 1 ½ teaspoons sugar
  • ¾ teaspoon salt
  • cup warm water 120° to 130°F*
  • 3 tablespoons oil
Filling
Topping
  • 4 tablespoons butter melted
  • ½ teaspoon garlic powder or chopped garlic
  • 1 tablespoon finely chopped parsley
Instructions
To make the pizza dough
  1. Combine 1 cup flour, yeast, sugar and salt in a large bowl. Add warm water and oil; mix until well blended. Gradually add an additional cup of flour to form a soft dough. Knead dough in a mixer fitted with hook attachment or on a lightly floured surface until a ball that is smooth and elastic forms. If needed, add additional ⅓ cup of flour. Place dough in a greased bowl, cover with plastic wrap, and allow to rest for 30-45 minutes.
To assemble the rolls
  1. Preheat the oven to 375 degrees. Line a large cookie sheet with parchment of foil.
  2. Divide into 12 pieces.
  3. Roll each little piece of dough until it is about 5 inches around. Spread 1 teaspoon of marinara sauce in the center of the round. Place the frozen Mozzarella bite in the center of the marinara sauce. Pull the edges of the ball over the mozzarella bite and pinch the edges together to close the ball. Place the ball, pinched side down, one the lined cookie sheet about 2 inches apart from one another.
  4. In a small bowl, combine melted butter, garlic powder or chopped garlic, and parsley. Brush the balls with garlic mixture.
  5. Bake the rolls for 15-18 minutes or until they are golden brown. Once down, brush with butter again and serve hot with a side of marinara dipping sauce.
