Ingredients
  • 1 bunch asparagus spears
  • 6 large eggs beaten
  • 1 ½ cups cream I used Half & Half
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 cup mushrooms sliced
  • 1 cup ham diced
  • 1 ½ cups shredded cheddar cheese divided
  • 1 9-inch refrigerated pie crust
Instructions
  1. Trim the bottom of the asparagus making the stalks about 4 ½ inches long. Cook for about 5 minutes in a pot of boiling water then rinse with cold water. Set aside.
  2. Preheat oven to 375 degrees. Lightly spray 9 inch pie plate with non stick cooking spray. Place pie plate on a foil lined cookie sheet.
  3. Unroll the pie crust and press into prepared pie plate and crimp the edges, if desired.
  4. In a large bowl, whisk together eggs, cream, and spices.
  5. Whisk in mushrooms, ham, and 1 cup shredded cheese.
  6. Pour mixture into the unbaked crust and spread filling around, if necessary.
  7. Arrange the asparagus spears around the filling.
  8. Sprinkle with remaining cheese.
  9. Lightly cover quiche with foil and bake for 25 minutes.
  10. Remove foil and bake uncovered for an addition 10-15 minutes or until golden and the center is no longer jiggly.
  11. Serve warm or at room temperature.
