  • 12 tablespoons 1.5 sticks unsalted butter, room temperature
  • 1 ½ cups granulated sugar plus 1 tablespoon for topping
  • 3 large eggs room temperature
  • 1 ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup sour cream room temperature
  • 1 ¾ cup diced strawberries
  1. Preheat oven to 350 degrees. Lightly spray a 9 in skillet or springform pan with non-stick cooking spray.
  2. In a large bowl, cream butter and sugar until pale and fluffy, about 4 minutes.
  3. Add eggs, one at a time, and mix until fully incorporated.
  4. Add the vanilla extract.
  5. Add flour, baking soda, and salt to the butter mixture and mix until just combined.
  6. Add the sour cream and mix until just combined, do not over mix.
  7. Stir in the diced strawberries.
  8. Pour batter into the prepared pan and spread evenly.
  9. Sprinkle remaining 1 tablespoon of sugar over batter.
  10. Bake pan for 35-40 minutes or until a knife is inserted into the center of the cake and comes out with only a few moist crumbs.
  11. Cool for 1 hour then slice into wedges.
  12. Serve with whipped cream and fresh strawberries, if desired.
