Smoked Fish Carbonara

Ingredients
  • 1 pound dry spaghetti
  • 2 tablespoons extra-virgin olive oil
  • ½ cup flaked smoked fish
  • 4 garlic cloves , finely chopped
  • 2 large eggs
  • 1 cup half and half
  • 1 cup freshly grated Parmesan cheese
  • Freshly ground black pepper
  • 1 handful fresh flat-leaf parsley , chopped
Instructions
  1. Make the pasta according to the directions on the package.
  2. While pasta is cooking, make the liquid.
  3. In a bowl, combine eggs, half and half, and Parmesan cheese and whisk to combine.
  4. When pasta is ready to be drained, reserve ½ cup of starchy liquid before draining.
  5. Pour pasta into colander, and place pan on medium high heat with olive oil.
  6. Quickly sauté garlic for about 2 minutes, then add smoked fish and cook for another minute.
  7. Reduce heat to low and add pasta and egg mixture.
  8. Cook while stirring for 2 minutes.
  9. If sauce begins to thicken, add a tablespoon at a time of the reserved pasta liquid.
  10. Serve immediately with freshly grated pepper, chopped parsley, and more shredded parmesan.
