Peanut Butter Truffles
  • 2 cups creamy peanut butter
  • ¼ cup unsalted butter , room temperature
  • ¼ teaspoon salt
  • ½ teaspoon pure vanilla extract
  • 2 ½ cups confectioner's sugar
  • 12 ounces good quality semi sweet chocolate
  • 2 tablespoon shortening or coconut oil
Peanut Butter Truffles
  1. Mix peanut butter, butter, salt, vanilla, and confectioner's sugar until well combined. Roll 1 inch balls and freeze for 30 minutes or refrigerate for 1 hour.
  2. Melt chocolate and shortening in a double boiler on low until melted, stirring constantly to avoid scorching.
  3. Dip each ball into chocolate and place on a drying rack.
  4. Decorate if desired. I topped some of them with toffee chocolate bits.
  5. After drying you can also melt ¼ cup of creamy peanut butter and drizzle over the tops of the truffles. Allow to thoroughly dry before storing.
