Gluten Free Granola Bars

  • 1 and ⅔ cup Gluten Free rolled oats
  • cup oat flour (pulverize oats in a blender until becomes flour)
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup sweetened coconut flakes
  • 1 cup peanut butter chips
  • 1 cup chopped walnuts (or any nut)
  • ¼ cup peanut butter
  • cup melted coconut oil
  • ¼ cup agave
  • 2 large eggs
  1. Preheat oven to 350 degrees. Line a 9x9 inch baking dish with parchment paper or spray generously with nonstick cooking spray.
  2. Combine all dry ingredients in the bowl of your mixer.
  3. In a small separate bowl, combine peanut butter, coconut oil, and agave. Mix together until blended.
  4. With your mixer running on low, slowly add the wet mixture.
  5. Add eggs one at a time until incorporated.
  6. Press granola into the pan evenly.
  7. Bake at 350 degrees for 35 minutes.
  8. Cool completely and chill for 1 hour before cutting into bars.
