Gooey Butter Bars

Ingredients
Bottom Layer
  • 1 ¾ cups all purpose flour
  • ¼ cup corn starch
  • 1 ¼ cups sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup unsalted butter , melted
  • 2 Tablespoons milk
Top Layer
  • 8 ounces cream cheese , softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter , melted and cooled
  • 16 ounce box of powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
Bottom Layer
  1. In a bowl sift together flour, corn starch, baking powder and salt.
  2. Using a hand beater or an electric mixer, mix together melted butter and sugar.
  3. Add flour mixture to butter and sugar, mix until combined.
  4. Add egg and milk, and mix to combine.
  5. Gradually add flour mixture to butter/sugar mixture until fully combined.
  6. Line a 9x13 inch pan with parchment paper or foil.
  7. Press bottom layer into the bottom of the pan.
Top Layer
  1. Beat together cream cheese, eggs, vanilla and melted butter.
  2. Gradually add powdered sugar and beat on medium low until combined.
  3. Spread top layer onto bottom layer evenly.
  4. Bake at 350 degrees for about 40 minutes. Cake will still be wiggly in the center, but this is what makes it a "gooey cake".
  5. Cool for 30 minutes before cutting. Serve with fresh berries and sifted powdered sugar, if desired.
