Chocolate Macadamia Nut Cookies

These chocolate macadamia nut cookies are guaranteed to satisfy your cookie craving thanks to crisp, golden edges and soft chewy centers packed with chocolate chips and macadamia nuts.

Ingredients
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup macadamia nuts
  • 1 cup chocolate chips
  • 2 tablespoon coconut oil or vegetable shortening
  • ½ cup finely chopped macadamia nuts
Instructions
  1. In the bowl of your mixer, cream together the butter and sugars until light and fluffy, about 2-3 minutes.

  2. Add the eggs and vanilla extract and beat for an additional 2-3 minutes, scraping down the bowl occasionally.

  3. Mix in the flour, salt, baking soda and baking powder on low speed until everything is just combined; do not overmix.

  4. Stir in chocolate chips and chopped macadamia nuts.

  5. Scoop out balls onto a parchment-lined cookie sheet and refrigerate for at least 1 hour.

  6. Preheat oven to 350 degrees.

  7. Transfer about 12 balls onto a parchment-lined baking sheet, about 2 inches apart.

  8. Bake for 9-10 minutes or until the edges of the cookies are golden, but the center of the cookie is still soft

  9. Remove pan from oven and carefully tap to remove excess air in the cookies. Cool for 10 minutes before transferring cookies to a cookie sheet to cool completely.

  10. In small microwavable bowl, microwave chocolate chips and oil or shortening uncovered on High 1 to 1 ½ minutes or until melted; stir until smooth.

  11. Dip half of each cooled cookie into melted chocolate and sprinkle with finely chopped macadamia nuts.

  12. Place on waxed paper until chocolate is set.
