Skillet Pork Tenderloin with Apples & Onions

Ingredients
  • 1 pork tenderloin about 1 ½ pounds
  • salt and pepper
  • ½ cup brown sugar
  • 3 tablespoons Dijon mustard
  • 2 cloves garlic minced
  • 1 tablespoon chopped fresh thyme leaves
  • 3 tablespoons olive oil
  • 2 tablespoons apple juice or water
  • 2 large apples sliced into wedges
  • 2 medium sweet onions sliced into wedges
Instructions
  1. Preheat oven to 400F.
  2. Season the pork with salt and pepper on all sides.
  3. In a medium bowl mix together brown sugar, Dijon mustard, garlic, thyme and apple juice.
  4. Put pork in the bowl with the brown sugar mixture, turning to coat.

  5. Cover and refrigerate for at 30 minutes or overnight.

  6. Pour oil into a large oven-proof skillet and bring it to medium heat on the stovetop.
  7. Place pork in the pan turning every 2-3 minutes until browned on all sides (about 8 minutes total).
  8. Add apples and onions.
  9. Transfer the skillet to the oven and let it roast 20-25 minutes, occasionally stirring the apple and onion mixture and turning the pork.

  10. Remove the pork to a platter and tent with foil.
  11. Let rest 10 minutes.
  12. Slice and serve the pork with the apples, onions and juices from the skillet. Goes well with rice, mashed or roasted potatoes.
