Ingredients
Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • ½ cup old fashioned rolled oats
  • teaspoon salt
  • ½ cup unsalted butter softened
Apples:
  • 3 Honeycrisp or Granny Smith apples peeled, cored and finely sliced
  • ½ teaspoon ground cinnamon
Crust:
  • 1 ½ cups all-purpose flour
  • ½ cup old fashioned rolled oats
  • ½ cup firmly packed brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup unsalted butter softened
Filling:
  • 16 ounces cream cheese softened
  • ½ cup sugar plus 2 tablespoons, divided
  • 2 large eggs
  • 1 teaspoon vanilla extract
Caramel Sauce:
  • 1 cup packed brown sugar
  • ½ cup salted butter
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees F. Line a 9x13 inch pan with foil or parchment paper.
  2. To make the streusel topping, combine brown sugar, flour, oats, and salt. Work in the butter, mixing until coarse crumbs form. Cover and refrigerate until ready to use.

  3. To make the apples, toss together the chopped apples with 2 tablespoons of sugar and cinnamon. Set aside.
  4. In a medium bowl, mix together flour, oats, brown sugar, cinnamon and salt.
  5. Cut in the butter with a pastry blender until mixture is crumbly.
  6. Press evenly into the prepared baking pan.
  7. Bake 15 minutes or until lightly browned.
  8. In a large bowl, beat cream cheese with ½ cup sugar in an electric mixer at medium speed until smooth.
  9. Add the eggs, one at a time, and vanilla; stir until smooth.
  10. Pour cheesecake filling over the warm crust.
  11. Top the cheesecake filling with the chopped apples then sprinkle with the streusel topping.
  12. Bake for 30 minutes, or until filling is set.
  13. To make the caramel drizzle, In a small pot over medium heat, bring brown sugar, butter, and cream to a gentle boil and cook until thickened, 2-4 minutes, stirring constantly. Remove from heat; add vanilla extract.

  14. Once bars have baked and cooled, slice into bars. Right before serving, drizzle with caramel sauce.
