Ingredients
  • 1 tablespoon extra virgin olive oil
  • 2 cups old-fashioned rolled oats
  • ¼ cup chopped pistachios
  • ¼ cup almond slices
  • ¼ cup chopped walnuts
  • ¼ cup raisins
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
Instructions
  1. Prepare the fire for medium-high heat. Place the grill plate over the flames.
  2. Heat a 10-inch cast-iron skillet over hot flame and then add olive oil.
  3. Add the oats and nuts and cook until toasted, 2 to 3 minutes, stirring as they cook. You will smell the nuts as the heat releases their oils.
  4. Stir in remaining ingredients and cook for 1 more minute.
  5. Remove from the heat and allow the granola to cool in the skillet.
  6. Serve alone or with yogurt.
Recipe Notes

You can also use coconut, sesame seeds, pumpkin seeds, and pecans. For dried fruit alternatives, chop dried apricots or use dried cranberries, cherries, or blueberries.
