Pumpkin Baked Oatmeal

Ingredients
  • 1 (15 oz.) can pumpkin purée
  • 1 ripe banana , mashed
  • 2 large eggs
  • ½ cups milk
  • ½ tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¾ teaspoon baking powder
  • ¼ cup brown sugar
  • cups Bob's Red Mill rolled oats
  • ¼ cup raisins
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray 9x13 in baking pan with non-stick cooking spray.
  3. Mix together dry ingredients.
  4. In a separate bowl, mix together wet ingredients.
  5. Add wet ingredients to dry ingredients, mix until combined.
  6. Pour batter into pan and bake for 35-40 minutes.
  7. Serve warm or room temperature.
  8. Optional- Serve with a dollop of greek yogurt, fresh fruit, and a drizzle of honey.
