Apricot Cardamom Granola

Ingredients
  • 4 cups old fashioned rolled oats
  • ½ cup packed light brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ½ cup diced dried apricots
  • ½ cup shelled pistachios
  • 1 cup shaved coconut
  • 1 cup butter melted or vegetable oil
  • ¾ cup honey
Instructions
  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
  2. In a bowl combine oats, brown sugar, spices, apricots, and pistachios.
  3. In a separate bowl, mix together butter and honey, pour into oat mixture.
  4. Combine all ingredients until everything is wet.
  5. Pour into baking sheet and spread all over the pan.
  6. Bake for 35 min, stirring the granola gently every 12 minutes.
  7. When done remove from oven and allow to cool.
  8. Once cooled, mix in shaved coconut.
  9. Store in an airtight container and enjoy!
